Who doesn’t love a Caesar Salad? This staple has always been a favorite of mine.. until I realized how bad the dressing is for you.
I found this healthy version and wanted to share with the world.
1 cup Kale
1 cup Escarole (if you don’t know what it is.. don’t worry.. you can find it in the produce section (usually labeled on the rubber band)
1/3 cup nonfat Greek yogurt
1 tbsp. Olive oil
1 tbsp. Worchestershire sauce
1 tbsp. Lemon juice
1 tsp. Ground mustard
1 tbsp. Minced anchovies (I used paste..)
black pepper and sea salt to taste
1/4 cup shredded Parmesan reggiano
mix all ingredients in bowl, toss with salad. Top with Parmesan cheese and bon appetito!
